What you need:
2lb bison chuck roast
1/4 cup olive oil
1/4 cup balsamic vinegar
1/4 cup water
1/2 cup red wine (the thicker the better! merlot, chianti, or a table wine works great!)
2 tbsp minced garlic
1 tbsp rosemary
salt and pepper
A meat thermometer
We had this roast for our Thanksgiving feast this year! It was wonderfully tender and delicious!!
Pour all liquids ingredients in the pan, over the chuck roast. I sprinkle the garlic on top, then add the rosemary, salt, and pepper. Cook at 275 degrees until thermometer reaches 145 degrees for internal doneness at medium rare. See How To Cook Bison for more info and guidelines.
The weight of your roast will determine the done time. My 4.7 lb roast took about 2.5 hours.
