Bison Thai Noodles

Watch it, it's HOT!


This is a spicy* dish that puts a spin on your typical comfort food--still makes you feel just as full, warm, and satisfied :) Although, I do recommend a good beer, cider, or white wine with unlimited refills to cool your tongue!


What you will need (split into stages):


Stage ONE:

1 lb bison meat

1/4 cup sriracha

2 tbsp soy sauce

2 tbsp olive oil


Stage TWO:

1/2 onion

1 bunch of bok choy

1 tbsp garlic, minced

2 tbsp soy sauce

1 tbsp olive oil

1/2 tbsp red pepper flakes


Stage THREE:

Half box thai noodles

1 tbsp soy sauce

1 tbsp sriracha

1 tbsp olive oil

1/2 tbsp red pepper flakes


To make (split into stages):


I recommend using a large pan with deep sides.


Stage ONE:

Cook bison meat on medium heat with all ingredients, plus salt and pepper to taste, until meat is browned. Start slicing white stalks of bok choy and dice onion for next stage. Removed from pan and place in large bowl. Leave drippings in pan.


Stage TWO:

Cook olive oil and garlic in pan on medium heat just until it starts to brown. Add sliced bok choy stalks, diced onion, soy sauce, red pepper flakes, and salt and pepper to taste. Start to boil water for noodles. Cook until onion is soft all the way through (approx. 6 mins). Slice the bok choy leaves for the next stage. Add back the meat to the pan and let it all cook to combine on a slightly lower heat setting.


Stage THREE:

Cook noodles per directions on box (some brands require you to let noodles ONLY stand in the hot water). Add the bok choy leaves to the pan of veggies and meat. Drain noodles, put them on top of veggies and meat, add soy sauce, sriracha, olive oil, and red pepper flakes right on top. Then stir the entire pan to combine.


YUM!


*want less heat? Don't use the red pepper flakes :)
